Roast and Peel Beets

The complex and earthy flavor of beets are a great addition to any meal. They can be tossed in salads, added to soup and stews, and even enjoyed simply on their own. This step-by-step “how to” will ensure you have perfectly roasted beets every time. So here’s how to roast and peel beets!

What You’ll Need:
Olive Oil
Aluminum Foil
Baking Sheet or Baking Dish
Paring Knife

1. Preheat an oven to 400 degrees F.

2. Trim off the root-end of the beets to expose some of the flesh. Then rub each beat generously with olive oil. Wrap the beets individually in aluminum foil and place on a baking sheet or in a baking dish.

3. Roast the beets in the oven until tender and a pairing knife easily pierces the vegetable when inserted, about 50 minutes.

4. Carefully remove the foil from the beets (as they will be very hot), and allow them to cool slightly. Once they are cool enough to handle, peel the skin off with a paring knife. Cut the beets into bite sized pieces and serve.
