Simple Chicken Salad

A simple chicken salad with celery, scallions and a creamy mayo dressing is one of my lunchtime favorites. Serve on toasted white bread or simply on its own.

Simple Chicken Salad
Yield: about 4 cups; serves 2 to 4

1 rotisserie chicken, skin removed and meat shredded (about 3 cups)
1 rib of celery, finely diced (about 1/2 cup)
2 scallions, thinly sliced
1/4 cup mayonnaise
Juice and zest of 1 lemon
1 teaspoon Worcestershire sauce
1 teaspoon Kosher salt
Freshly ground black pepper

1) In a large bowl, whisk together the mayonnaise, lemon juice and zest, Worcestershire sauce, kosher salt and a few grinds of black pepper until smooth and combined.

2) Add the shredded chicken, celery and scallions to the dressing and toss to evenly coat. Taste and adjust seasoning if necessary. Serve on toasted bread with arugula or simply on its own.
