Buffalo sauce and cauliflower is a winning combination, so why not enjoy this combo as a side dish to your weeknight meal?! If you like it extra spicy, add a few more dashes of hot sauce before serving.
Buffalo Cauliflower Rice
Serves: 4
3 tablespoons unsalted butter
1 small onion, minced
Kosher salt and freshly ground black pepper
1 pound cauliflower rice
3 tablespoons hot sauce, such as Franks
2 scallions, thinly sliced
1. Heat 1 tablespoon of butter in a large saute pan over medium-high heat. Add the onion, a pinch of salt and a few grinds of black pepper, and cook until the onions are just translucent and tender, about 5 minutes. Add the cauliflower rice and give it a good stir. Continue to cook until the cauliflower is warmed through and tender, about 5 minutes.
2. Meanwhile, melt the remaining 2 tablespoons of butter in a medium bowl. Whisk in the hot sauce until smooth and combined. Drizzle over the cauliflower mixture, then toss to evenly coat. Taste and adjust the seasoning with more salt and/or hot sauce. Top with sliced scallions and serve warm.
