Guacamole with Jalapeño and Lime
Yield: about 2 cups

2 ripe avocados, halved, pitted, flesh removed
3 tablespoons fresh cilantro, roughly chopped
1/2 jalapeño, seeds removed and minced
Juice of 1 whole lime
1 teaspoon kosher salt
Tortilla chips, for serving

1) In a medium bowl, mash the avocados until smooth but leave a few small chunks for texture. Stir in the cilantro, jalapeño, lime juice and salt. Serve in a bowl with tortilla chips for dipping.

* Cook’s Note: Char the jalapeño in a broiler or over a gas flame before mincing for additional smokey flavor in your guacamole.
