Tzatziki
Yield: about 1 cup
1 cup plain Greek yogurt
1 Persian cucumber, shredded
1 lemon, juiced
1 clove of garlic, minced
1 tablespoon fresh dill, roughly chopped
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1) In a medium bowl, whisk together the yogurt, shredded cucumber, lemon juice, garlic, dill, salt and freshly ground black pepper until smooth and combined. Refrigerate until ready to serve and store in an air-tight container for up to 5 days.
