Sesame Lime Dressing

Fresh lime juice and toasted sesame seeds combine for a delicious dressing you’ll want on any salad. Plus, this dressing has the perfect creamy texture without any added dairy. If you’re a lover of spice, add an entire jalapeño for an extra kick of heat.

Sesame Lime Dressing
Yield: about 3/4 cup

3 tablespoons toasted white sesame seeds
1/4 cup caramelized onions
1/2 small jalapeño, seeds removed
1 clove garlic
2 teaspoons fish sauce
3 tablespoons lime juice (about 2 whole limes)
3 tablespoons rice wine vinegar
1/4 cup extra virgin olive oil
Kosher salt and freshly ground black pepper

1) Put all the ingredients, including a pinch of kosher salt and a few grinds of black pepper in a food processor and puree until almost completely smooth but with a few sesame seeds remaining whole. The texture should be similar to other creamy dressings, like caesar. Store in an airtight container and refrigerate until ready to use.

* If you want the dressing to be less spicy, char the jalapeño first in a broiler or over a gas flame and make sure to remove all of the seeds. Alternatively, if you want added spice, leave the seeds and/or incorporate an entire jalapeño to this recipe.
