Matcha White Chocolate Chip Cookies
Yield: 24 cookies
2 cups AP flour
2 teaspoons baking powder
1/2 teaspoon kosher salt
2 tablespoons matcha green tea powder
3/4 cup sugar
2/3 cup canola oil
2 large eggs
3/4 teaspoons pure vanilla extract
1 1/2 cups white chocolate chips
1) Preheat an oven to 350 degrees F and line two baking sheets with parchment paper.
2) Whisk the flour, baking powder, salt and matcha powder together in a large bowl. In another large bowl, whisk the sugar, oil, eggs, vanilla extract and 2 tablespoons of water until completely smooth and combined. Add the wet ingredients into the dry ingredients and whisk until the dough just comes together. Fold in the white chocolate chips until evenly distributed throughout the dough.
3) Scoop the dough into 1 inch balls and place 2 inches apart on the prepared baking sheets. Refrigerate the dough for 30 minutes until chilled.
4) Bake the chilled cookies in the oven until the bottoms are just browned and the edges have set, about 10 minutes. Transfer to a wire rack and cool completely. Store in an airtight container for up to one week.
