Fregola is a semolina pasta, similar in size and texture to pearl couscous (as they are both made of wheat). Each piece of pasta is a tiny, rolled ball that is dried and toasted. The toasting process adds intense nutty flavor unlike many other types of pasta.
To cook fregola, simply boil in salted water until al dente, 6 to 8 minutes. Then enjoy as you would any other pasta; top with a simple tomato sauce, toss in a crisp green salad, or with freshly chopped herbs and a squeeze of lemon.
