Baby bok choy is a type of Chinese cabbage that has crisp, white bottoms and leafy, green tops. This versatile ingredient is very mild in flavor and similar in texture to thick asparagus. These little veggies are also packed with Vitamin A and Vitamin C, making for a nutritious ingredient to work with. Try using baby bok choy in a cold noodle salad, garlic fried rice, or even simply on its own.
To cook, blanch the baby bok choy in boiling, salted water for about 30 seconds. Once tender, shock in ice water to stop the cooking and to reserve the bright green color. Serve cold or reheat gently for a nutritious and tasty side dish.
