For a decadent sandwich that is stuffed with salty cheese and sweet caramelized onions, try this scrumptious Caramelize Onion Grilled Cheese. Serve alongside your favorite tomato soup for a complete and flavorful meal.
Caramelized Onion Grilled Cheese
Yield: 1 sandwich
1 tablespoon mayo
1 teaspoon dijon mustard
1/4 teaspoon grated horseradish
1 tablespoon unsalted butter, at room temperature
2 slices whole wheat bread
1 slice white cheddar cheese
3 tablespoons caramelized onions
2 tablespoons grated parmesan
1) In a small bowl, mix together the mayo, dijon and grated horseradish. Set aside.
2) Spread the room temperature butter evenly on each slice of bread. Flip the slices over and spread the horseradish sauce on the other side. On one piece of bread, add the slice of cheese, caramelized onions and grated parmesan. Top with the other slice of bread, leaving the buttered side on the outside of the sandwich.
3) In a small nonstick sauté pan over medium heat, add the sandwich and toast each side until golden brown and the cheese has melted, about 2 minutes per side. Remove from the heat, cut in half, and serve immediately.
