Sweet pomegranate juice and floral gin come together in this refreshing cocktail. Plus, the addition of bubbly prosecco provides effervescence that is hard to resist.
Pomegranate Gin Spritzer
Yield: 2 servings
1/4 cup (2 ounces) pomegranate juice
1/2 cup (4 ounces) gin, such as Beefeater or Tanqueray
1 lime, 1/2 juiced and 1/2 cut into wheels
1/2 cup (4 ounces) prosecco or champagne
1 tablespoon fresh pomegranate seeds
1) Pour the pomegranate juice, gin and lime juice into a cocktail shaker with ice. Cover with its top and shake so the gin mixture is combined and chilled.
2) Pour the chilled gin mixture into two rocks glasses or short wine glasses. Top each cocktail with prosecco/champagne, and garnish with pomegranate seeds and a lime wheel.
*Cook’s Note: If you want this cocktail to be less strong, use tonic or soda water instead of prosecco. The cocktail will have a little less alcohol but still the bubbly finish.
