A classic caprese salad with a twist; burrata and mint! But if you’re a fan of the classic caprese, you can easily swap out the mint for basil and the burrata for mozzarella to have that one-of-a-kind flavor combination.
Caprese Salad with Burrata and Mint
Yield: 4 Salads
2 cups red cherry tomatoes, halved
8 ounces (2 balls) burrata, sliced in half (four pieces total)
3 tablespoons mint
2 tablespoon balsamic vinegar
6 tablespoons EVOO
1 teaspoon salt
1/2 teaspoon fresh cracked black pepper
Directions:
1) Make the vinaigrette by whisking together the balsamic vinegar, EVOO, salt and pepper. Set aside. This can be made a day in advance.
2) In a medium sized bowl, toss the tomatoes with the vinaigrette and set aside.
3) Put 1/2 of the sliced burrata on four plates. Divide the tomato salad evenly between the four salads by scooping the tomatoes on top and around the burrata. Sprinkle with additional salt and pepper, and garnish with mint to finish.
