Rice crispy treats are delicious on their own when they’re simply tossed with melted marshmallows and butter. But add peanut butter and a rich chocolate drizzle, and you have cereal treats that are out of this world.
Peanut Butter and Chocolate Rice Crispy Treats
Yield: about 12 bars; 4 to 6 servings
4 tablespoons unsalted butter
1, 10.5 ounce bag mini marshmallows (about 5 cups)
1/2 cup creamy peanut butter
6 cups rice crispy cereal
2 ounces semi sweet chocolate, chopped
1 teaspoon shortening or coconut oil
1. Line an 8 by 8-inch baking dish with aluminum nonstick foil or parchment paper, then set aside.
2. Melt the butter in a large pot over medium heat. Once melted, add the marshmallows and peanut butter, then stir continuously until the marshmallows have melted and the mixture is a smooth caramel color. Next, stir in the cereal until evenly coated in the marshmallow mixture, then remove the pot from the heat.
3. Transfer the mixture to the prepared baking dish and press down firmly so the rice crispy treats are in an even layer. Let the rice crispy treats cool down until at they are at room temperature.
4. Meanwhile, microwave the chocolate and shortening/coconut oil in a small bowl, stirring occasionally, until melted and smooth. Drizzle the chocolate mixture over the top of the cooled cereal treats, then chill until the chocolate has set. Use the foil or parchment paper to help remove the rice crispy treats from the baking dish, then cut into small squares and serve.
*Cook’s Note: If you don’t have an 8 by 8-inch baking dish, you can also use a 9 by 9-inch or a 9 x 13-inch, the rice crispy treats will just be a little thinner.
