Blistered Peppers and Onions

Tender bell peppers and caramelized onions with bits of char are delicious. And when you add the right amount of seasoning and herbs, like oregano, you have the perfect dish. Enjoy these peppers and onions on their own or add them to a sandwich, salad or pasta for added flavor to any meal.

Blistered Peppers and Onions
Yield: Serves 2 to 4

2 tablespoons olive oil
1 large red onion, halved and thinly sided
2 red bell peppers, thinly sliced
1 clove of garlic, minced
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon dried oregano

In a large saute pan over medium high heat, add the oil. Once warm, add the onion, bell peppers, garlic, salt and pepper and toss with tongs or a wooden spoon.Continue cooking the vegetables until they are very tender and browned in spots, about 10 minutes.

Once tender, add the oregano and cook for 2 minutes more. Serve the peppers and onions warm and enjoy!
