Air Fryer Chili-Lime Corn

Sweet summer corn gets tossed in oil, chili-lime seasoning, salt and pepper, then it’s air-fried at 400 degrees F until tender and charred, about 8 minutes. Squeeze over fresh lime juice and sprinkle with chopped cilantro…how easy is that?!

I like to cut the corn cobs crosswise into 2-inch pieces, so they easily fit in the air fryer basket. Plus, they’re fun to eat! I also suggest buying fresh corn that’s still in the husk. Sweet summer corn is packed with flavor and is less starchy, making it ideal for eating and preparing in the air fryer.

Chili-lime seasoning is typically a mixture of salt, lime powder and dried chilis, such as chipotle, guajillo and ancho. It can be found in the spice section of most grocery stores. While I love the combination of chili and lime, feel free to play around with other spice blends; this recipe is very adaptable to different flavor profiles!

And don’t forget to finish with a squeeze of lime and freshly chopped herbs. It adds a freshness to your dish and gives you a beautiful presentation that your family and friends will enjoy.

Ingredients

4 ears of corn, husk removed
4 tablespoons olive oil
2 teaspoons chili-lime seasoning, plus more for serving
Kosher salt and freshly ground black pepper
1 lime, cut into wedges
Fresh cilantro leaves, minced


Method

1. Cut the corn crosswise into quarters (each about 2-inches long).

2. Toss the corn with the olive oil, chili-lime seasoning, 1/2 teaspoon of salt and several grinds of black pepper in a large bowl until well combined. Transfer to an air fryer basket.

3. Air fry the corn at 400 degrees F until tender and charred in spots, shaking the basket halfway through, about 8 minutes.

4. Transfer to a serving plate and squeeze over fresh lime juice. Serve with more lime wedges on the side and sprinkle with chopped cilantro.
